THE STORY

The Miyakozuru brand has been passed down through generations of renowned sake brewers and continues to this day. In 1840 (Tenpo 11), it was recorded as being ranked as a top-tier sake in the newly published "Edo Tsumi Meishu Daiyori Tame Goranhyo" (Great List of Famous Sakes of Edo).庚子Kanoe

The name " Miyako Tsuru" originates from the fact that cranes have long been considered a symbol of fidelity and chastity, as they are known to live for a thousand years. The name "Miyako Tsuru" was created by combining the crane, a symbol of longevity, with Kyoto's thousand-year history.都鶴Miyakotsuru

This name embodies our wish to continue honestly brewing sake that will be loved by people for many years to come.

Building upon its long-standing history, Tsuru Sake Brewery will continue to carefully brew sake that resonates with the times.

THE PLACE

In Fushimi, Kyoto, a place once also written as "[ ]", pure, pristine groundwater that has seeped through the Momoyama Hills has been quietly bubbling up since ancient times.伏水Fushimizu

In the Heian period, it was said that drinking this water, which gushed forth within the grounds of Gokogu Shrine, cured illnesses. Later, Toyotomi Hideyoshi is said to have cherished this highly renowned spring water at the tea ceremonies of Fushimi Castle. Our mission is to infuse the memories of the earth, accumulated over eons, into every drop of our sake.

THE CRAFT

RICE

Yachiya believes that sake brewing begins with rice cultivation. Its local sake is made with Gohyakumangoku grown by farmers around Kanazawa, while its ginjo sake uses prized Yamada Nishiki from Hyogo.

WATER

Yachiya's sake is shaped by the pure water of the Io-zan water system. Slightly soft and gently acidic, this abundant local water has supported sake brewing in Kanazawa for generations.

MASTER BREWER

Yamagishi Shoji brings decades of experience to Yachiya. Recognised as one of Noto's leading master brewers, his sake has earned nine gold medals at Japan's National New Sake Appraisal.
